Yes, Motorola M68HC11 is a very good candidate for the application.

Aptronix, Inc. codeveloped this popular fuzzy chip with Motorola engineers
5 years ago. The key to its great success is the Aptronix patented
TVFI (truth-value flow inference) algorithm for defuzzification, which is
on average 100 times faster than the original COG (center of gravity)
method developed by Mandani many year ago.

The core of TVFI is to replace the time- and memory-consuming
division of COG by a new, faster algorithm implemented in the FIDE(TM)
software tool of Aptronix. Below are the benchmarks for Motorola M68HC11
using FIDE(TM) development kit by Aptronix, Inc.
